A traditional recipe using kumera, known as sweet potato. A simple baked sweet potato similar to sweet potato mash but more flavour! Enjoy with all meats/chicken or fish and add some green leafy vegetables. This recipe was tested and photographed by Jackie Wilson - a Registered Dietitian.

Instructions

Step 1
Grate the sweet potato into a pie dish and pour over the milk.
Step 2
Smooth with fork and pour a little melted butter over top. add seasoning - salt and black pepper
Step 3
Put in oven until brown on top and stir after 30 minutes
Step 4
Cook for a further 15-20minutes until the potato is soft and brown on the top.
