Step 1
Heat a wok over medium high heat, then add 1 tbsp oil. Add the shrimp and stir fry for about 4 minutes until they begin to turn pink.
Step 2
Season the eggs with salt and pepper and pour over the shrimp. Stir fry then add the garlic chives.
Step 3
Cook for an additional 4 minutes stirring all the time until the eggs are cooked through but still soft in texture. Serve immediately and garnish with extra chives.
