Step 1
Split pork kidney into half from the side, and remove all inner vein completely and slice it thin. Gently give some even cuts on the sliced pork kidney at a 45 degree angle without cutting it off at the way. Then cut across the cuts at a 45 degree angle, this helps to give pork kidney a beautiful “flower blossom “appearance.
Step 2
Marinate sliced pork kidney with salt, black pepper and beer for 10 minutes. Drain and marinate with potato starch.
Step 3
Slice and chop some garlic, ginger, green onion, Chinese celery and picked chili and fresh chili.
Step 4
Stir fry in a pan filled with adequate amount of heated cooking oil for about 20-30 seconds, and remove quickly from the heat and drain.
Step 5
Put chopped garlic, ginger, picked chili in heated oil to cook in a saucepan for a minute until the aroma comes out, and then add in pre-cooked pork kidney in the sauce to mix together. Simply season it with salt, chicken powder, and garnish with scallion and Chinese celery. Serve warm.
