Homemade pickles. Makes enough for roughly 30 po-boys using 3-4 pickles each. Use within 2-3 weeks. Part drain for service.

Instructions

Step 1
Cut the cucumber into strips or discs 3mm thick
Step 2
Liberally cover them in salt, put something heavy on top of them, and leave for 4hrs until all moisture has been released
Step 3
Rinse off all the salt thoroughly
Step 4
Add all other ingredients to a pam and bring to the boil and dissolve the sugar.
Step 5
Add the cucumber to the pan and bring back to a boil.
Step 6
As soon as it starts to boil again, take it off the heat and allow to cool
Step 7
Place pickles and brine in a jar and leave for 2 days
