Dutch Oven No-Knead Bread

This bread is a simple, no knead bread, with phenomenal flavor. It is cooked inside a dutch oven, which serves as an "oven within an oven", creating the perfect atmosphere for a crusty, aromatic, artisan-looking bread.

Mix the flour, salt and yeast in a big bowl

Add the water, and stir with a large wooden spoon, until a wet dough forms

Cover and let rise for 12 hours (so better start preparing the evening before)

Transfer the dough to a well floured surface, and fold it into itself until it gains some elasticity and forms into a round loaf

Tighten the dough into a round loaf, place on a well floured surface, and cover again for 2-3 hours, until doubles in size

Preheat the over to the maximum temperature (at least 250 c). Place the dutch oven in the middle of the oven, lid off but also place the lid in, and heat for at least 30 minutes. The pot should be super hot.

Take the dutch oven out (carefully) and sprinkle the bottom with flour

Now you need to act quickly: lift the loaf and place it (carefully!!!) inside the dutch oven

Create a single slice on top of the loaf with a sharp knife

Spray well with water, close the lid, and place at the center of the oven

Bake, lid on, for 30 minutes

Take the lid off and partially cover the pot, and bake for an additional 15 minutes

Take the pot out of the oven, turn it over to drop the bread to your board.

For extra crust - place the loaf at the bottom of the oven, still turned on, for 10 minutes. Then, turn the oven off, and leave the loaf inside for another 10 minutes

Take the loaf out of the oven, and let it cool completely on a rack before slicing. Enjoy!
