Instructions
Step 1
Heat oven to 400
Step 2
Whisk eggs, cream & salt together
Step 3
Brown sausage. Remove from heat. Reduce heat to low. In same pan, sauté onions and squash for 15 minutes or until squash is tender. Don’t let them brown.
Step 4
Add spinach. Add sausage back into pan. Layer meat & veggies flat. Pour egg mixture over, tilt to make sure eggs are even. Cook on stovetop 1-2 min, until the edges set.
Step 5
Bake 8-10 minutes. Cool for 5 minutes.
