Chipotle Pepper Chili Mac (Updated Version)

Chipotle Chili Mac INGREDIENTS 1 Tbsp olive oil 1/2 cup white onion, chopped 1 Tbsp minced garlic 10-12oz plant-based grounds 1 Tbsp vegan Worcestershire sauce 2 Tbsp tomato paste 1/2 diced chipotle peppers in adobo sauce 1 Tbsp chili powder Salt & pepper to taste 3.5 cups vegetable broth 2 cups macaroni elbow pasta 2 x 15oz cans black beans, drained 7oz shredded vegan cheddar, divided Cilantro to garnish STEPS 1. In pot or large sauté pan, heat olive oil to medium 2. Sauté onion and garlic until soft 3. Add plant-based grounds, Worcestershire sauce, tomato paste, chipotle peppers, chili powder, and salt & pepper to pan. Cook until browned 4. Add vegetable broth and pasta to pan. Boil until pasta shells are al dente 5. Add cheddar cheese and cook until cheese is melted 6. Top with a sprinkle of cheddar and cilantro. Enjoy!!! For extra heat add crispy jalapeños!
