Instructions
Step 1
Stab the jacket potatoes with a fork and coat well in oil and salt. Pop into a preheated oven at 200 fan for around 25 minutes.
Step 2
Meanwhile, chop up the chicken breast, onion and peppers. Fry off the chicken in a pan with the garlic, fajita seasoning, pepper and paprika until browned and then add in the onion and pepper.
Step 3
Add in the low fat cream cheese, and stir through.
Step 4
When the jacket potatoes are done, take them out and cut in half, horizontal and vertical.
Step 5
Cover the jacket potatoes in the fajita mix and top with the mozzarella and sour cream, and serve!
