Instructions
Prepare Cauliflower
Step 1
CUT cauliflower into florets
Step 2
PLACE into a microwave safe bowl
Step 3
ADD 2 Tbsp of water, cover with cling film
Step 4
MICROWAVE for 5-8 minutes, until cooked, tender
Step 5
DRAIN let sit for 1-2 min
Preparing the Dish
Step 6
ADD cauliflower to a food processor
PROCESS until fluffy
Step 7
ADD butter, garlic powder, sour cream
PROCESS until it resembles the consistency of mashed potatoes
Step 8
PLACE cauliflower mixture to a bowl
ADD most of the chives, saving some to add to the top later
Step 9
ADD 1/2 the cheddar cheese, mix by hand
SEASON with salt & pepper, to taste
Step 10
TOP the loaded cauliflower with the remaining cheese, chives, bacon
PLACE in the microwave, to melt the cheese or place in the oven to broil for a few minutes
