Spinach stew with beef and red kidney beans
This spinach stew is so hearty and delicious, you can make this stew meatless or add protein of choice like beef, lamb, chicken, veal and you can also add chick peas instead of red kidney beans.
——Ingredients——
2 pounds beef stew meat
1/2 tablespoon salt
1 cup water
2 bunches of spinach
3 tablespoon olive oil
1 medium size onion diced
2 cloves garlic minced
1 large tomato diced
6oz tomato paste
1 can Red kidney beans
4 cups water
2 tablespoon chicken bouillon
1/2 teaspoon black pepper
1/4 teaspoon cumin
1 teaspoon salt or to taste
2 tablespoons pomegranate molasses (or 2 tablespoons fresh lemon juice if you don’t have pomegranate molasses)
:
1. Put the beef in the pressure cooker add 1/2 tablespoon salt, 1 cup water, close up the pressure cooker and pressure cook for 30 minutes.
2. Cut the spinach and wash really well
3. Put a pot on high heat add 3 tablespoons olive oil, diced onion, minced garlic and sauté for about a minute. Next add in the diced tomato, tomato paste mix and let it cook for about 2 minutes.
4. Then Add in the spinach, the cooked beef, red kidney beans, water and all the seasonings (chicken bouillon, black pepper, cumin and salt) and give it a good stir.
5. Cover the pot bring the heat down to medium and let the stew simmer for about 20 to 25 minutes depending on how watery or thick you want your stew.
6. When the stew is done simmering turn off the heat and drizzle in the pomegranate molasses (or lemon juice) mix and enjoy it with some rice.
