Step 1
Heat 2 tbsp oil in a frying pan on a medium-high heat.

Add the thyme and garlic and cook for 1 minute, until aromatic.

Add the courgettes and fry until browned, 5-10 minutes.

Meanwhile, toast your bread. Drizzle with olive oil and sprinkle with oregano and basil.
