Cajun Chicken Salad

Instructions

Step 1
Season chicken with a bit of olive oil, a tablespoon of Cajun seasoning, a shake of sealing salt and a teaspoon of paprika.
Step 2
Chop and season carrots and red pepper separately with olive oil, Cajun seasoning, seasoning salt and paprika. Add carrots to air fryer or oven until almost completely roasted (~15mins in air fryer, ~30 in oven but times will vary). Add peppers in with carrots for last 5 minutes.
Step 3
Heat a tablespoon of olive oil in pan. Transfer chicken to pan when oil is hot and cook through (~6mins per side).
Step 4
When chicken and vegetables are cooked, set aside to cool down a bit.
Step 5
Put desired amount of greens in a large bowl.
Step 6
Chop desired amount of red cabbage to bowl - the proportions are based on your preference (I use approximately 1/4 of the amount of lettuce I used)
Step 7
Add desired amount of avocado to bowl (I used 1)
Step 8
Dice desired amount of red onion (I used 1/4 of a medium red onion)
Step 9
Add cooked carrots, red peppers and chicken to your bowl.
Step 10
Chop a large handful of fresh dill and add to your bowl.
Step 11
To make the dressing add: 1/4 cup olive oil, 1/4 mayo, 1/4 lime juice, handful fresh parsley, 1 clove garlic, 2 tablespoons Cajun seasoning and salt and pepper if desired to a blender. Alternatively, dice everything very fine and shake in a jar or use immersion blender. Add dressing to salad.
