Tortilla Pizza

It’s been a while since I posted about food.

This is a healthier alternative to our regular homemade (by
) weekend pizza.

🔹tortilla (back for 3 mins prior to adding toppings)

🔹add all your favourite toppings (minus cheese) to the pizza
.
🔹onion
🔹tomatoes
🔹celery
🔹mushrooms
🔹peppers
.
Mix in tomato purée and balsamic vinegar.
.
Place the veg around the outside of the tortilla and add an egg (or two) to the centre and back in the oven for 15 minutes.
.
Check the eggs are cooked and add a salad of spinach, cucumber and basil. If you like a dressing add a splash of white wine vinegar, a tsp of whole grain mustard and 2g of honey to make a dressing.

Lovely 20 minute meal done ✅

Leftovers can be added to a box and used the next day 🙌🏻
