Instructions

Step 1
1. Cook 6 oz of protein pasta by following the directions on the box. Reserve 1/2 cup of pasta water.
Step 2
2. Finely chop mushrooms and broccoli.
Step 3
3. Blend 1 c almond milk, 2/3 c low fat cottage cheese, 4 lite laughing cow wedges, tomato, 2 garlic cloves, salt, and pepper to taste.
Step 4
4. Pat the shrimp dry and season to taste - what I used is in the ingredient list.
Step 5
5. Melt 3 tbsp of light margarine to a pan and add shrimp. Cook for 2 minutes on each side and remove.
Step 6
6. Add in chipotle sauce and simmer for 10 minutes. To remove the remainder of the sauce from the blender, add the pasta water & shake.
Step 7
7. Mix in the mushrooms and broccoli. Cook for 5 minutes.
Step 8
8. Add in the pasta and combine well. Taste the sauce and add seasonings to taste.
Step 9
9. Turn off the heat and mix in cheese.
Step 10
10. Divide into 4 equal servings: ~1.25 cup of pasta and 9-10 shrimp.
Step 11
11. When ready to serve top with grated parmesan cheese and/or chili flakes.
