Instructions
Step 1
In a large saucepan, sauté onion, celery, and carrot in butter 5 minutes.
Step 2
Stir in mustard and add next 4 ingredients.
Step 3
Bring to a boil, reduce heat, cover, and simmer 10 minutes.
Step 4
Add corn and half-and-half, and simmer 6 minutes.
Step 5
Reduce heat to low and add 1/2 cups cheese.
Step 6
Stir until just melted.
