Instructions
Step 1
Preheat the oven to 350 degrees.
Coat a small baking dish with cooking spray.
Step 2
Mix melted butter, olive oil, brown sugar, cinnamon, nutmeg, ginger and salt
Step 3
Place diced sweet potatoes in the baking dish and pour butter mixture over the potatoes. Add more sugar or cinnamon if desired.
Step 4
Toss to coat evenly.
Step 5
Bake in the oven for 60 minutes. Stir the sweet potatoes once or twice during roasting. Serve
