Golden Rich Banana Bread (No Sugar Added)

A truly moist and perfect crumb banana bread with just the right banana flavor. Take it to the the max and add in walnuts and raisins and this rich banana bread become an even more decadent banana bread. But best of all it’s made with monk fruit (Lakanto brand) and doesn’t have an after taste. It taste as if I had made it with sugar.

Instructions

Step 1
Preheat oven to 350 degrees
Step 2
Grease a 5 x 9 loaf pan** with cooking oil optional: you may dust loaf pans with a little cinnamon and sugar after greasing pans. This creates a nice crust to the bread.
Step 3
In a large bowl, mix together monk fruit and butter mixing well. Stir in the eggs and vanilla until combined.
Step 4
In another bowl, mix together the flour, salt, and baking soda. Now stir the flour mixture until smooth.
Step 5
Next stir in the mashed bananas and sour cream.
Step 6
Fold in the walnuts and raisins.
Step 7
Spread batter evenly in in a prepared loaf pan.
Step 8
Bake approx 55-60 minutes until an inserted cake tester comes out clean, then remove from the oven and cool in the pan for 10 mins. Invert the loaf pan onto a cooling rack to remove the loaf from the pan. Once cooled serve and enjoy!
