Step 1
Whisk eggs and sugar until thick and creamy
Step 2
Fold in the sieved flour, baking powder and flavouring
Step 3
Divide the mixture between two greased 18cm sandwich tins. Bake in a moderate oven for about 15 minutes.
Step 4
Turn out on a wire tray. Place another wire tray over and reverse. Leave until cold.
Step 5
Spread each sandwich with jam. Spread whipped cream over one side. Place the other half of sandwich on top. Dredge a little castor sugar or icing sugar over the top.
