These crumbl apple pie cookies are made aith an oat cookie then topped with homemade apple pie filling and crunchy oaty cookie crumbs. Perfect for the holidays!

Instructions

Apple Pie Filling

Step 1
In lg. bowl, mix apples & lemon (to keep apples 🍎 them from darkening). Set aside.
Step 2
In med. saucepan, add water, brown sugar, sugar, vanilla, cornstarch, cinnamon, ginger, allspice, & nutmeg; whisk to combine. Bring to a boil on med; cook (1-2 min.) until it thickens a little bit.
Step 3
Mix in the sliced apples and sitr to coat them in the liquid mixture. Cover with a lid and cook for 15-20 minutes, stirring from time to time. The apple should be soft. Remove from the heat and set aside to cool.

Preheat oven to 350°F

Step 4
Line a baking sheet with parchement paper and set it aside.
Step 5
In bowl, cream butter & brown sugar until smooth. Add egg, molasses, & vanilla; mix again to combine.
Step 6
Fold in oats, flour, cinnamon, cornstarch, baking powder, & salt just until the dry mixture disappears. Save about 1T of cookie dough aside.
Step 7
Using lg. cookie scooper, scoop out 7 equally sized cookie dough balls. Place them on prepared baking sheet; gently press down with back of a ¼C measuring cup.
Step 8
Bake (12 min.). Once cookies come out, press center with measuring cup again in case they lost that well in center.
Step 9
In sm. parchement-lined baking sheet, crumble the 1T reserved cookie dough; bake in oven (6 min.) Remove cookie dough; cool down for a few min. then crumble it some more & bake again (2 min.) to get it extra crunchy.
Step 10
Top each cookie with apple pie filling then top it with oat cookie crumbs & enjoy!
