Instructions
Step 1
Heat 2 Tbsp of olive oil in a large pan and cook the chopped onion for 3-5 minutes until soft.
Step 2
Add the following to the pan and stir: 300g of paella rice, 1 Tbsp paprika powder, 1 tsp dried thyme, 4 Tbsp of white wine (optional)
Step 3
Immediately stir in a can of chopped
tomatoes and 800 ml of vegetable stock.
Cook for 15 minutes on a medium heat (do
not cover)
Step 4
In a separate smaller pan, heat 1 Tbsp of olive oil and add 2 cloves of minced garlic frying on a low heat for 30 seconds, continually stirring
Step 5
Add the seafood to the garlic and increase to a medium heat, cooking until ready.
Step 6
Once the paella has cooked for 15 minutes,add the seafood to the paella rice and cover the pan with a lid. Cook for a further 5-10 minutes on a low-medium heat.
Step 7
Serve the paella hot with a generous squeeze of lemon juice and fresh parsley
