Instructions
Step 1
break a head of cauliflower into bite size pieces, toss w/olive oil & cumin & roast at 500 for 15ish min until starting to brown
Step 2
add 6 (or more) dates (i like them in small pieces, my partner prefers halved) to cauliflower pan for remaining 15ish min till browned & caramelized
Step 3
mix 3 Tbsp tahini + 2 Tbsp water till smooth. toast 1/2c pine nuts on med heat till they smell like popcorn
Step 4
combine pine nuts, 2 sliced scallions, 1c chopped mint, 2Tbsp vinegar + 2Tbsp oil, season to taste
Step 5
layer tahini on bottom of serving dish, top with cauliflower/dates & spoon minty nutty vinegar mixture on top. EAT IT
