Instructions

Step 1
Preheat your oven to 350F. Line an 8×8 inch square baking tin with parchment paper.
Step 2
Wash and dry the strawberries, cut off green tops and dice into small pieces.
Step 3
In a large bowl, combine sugar and lemon zest and press together between your fingertips to release the lemon oil.
Step 4
Add the flour, baking powder and salt and whisk to combine.
Step 5
Make a well in the center and crack in the eggs, and add the melted butter, lemon juice and vanilla. Whisk until well combined.
Step 6
Swap to a spatula and fold in the diced strawberries.
Step 7
Pour into prepared tin and level out with your spatula.
Step 8
Bake for 25-30 minutes until the top is dry and the edges are starting to turn golden.
Step 9
Cool in the tin for at least 45 minutes before making the icing.
Step 10
FOR THE STRAWBERRY ICING
Step 11
Mash strawberries, then push them through a strainer to remove seeds and any larger pieces of pulp.
Step 12
Mix the puree with the icing sugar until you have a smooth icing, pour over the cooled blondies. Let it set slightly before cutting into slices.
