Parmesan Panko Chicken Tenders

Ingredients
4 servings

1.5 poundschicken breast tenders

½ teaspoonkosher salt

¼ teaspoonblack pepper
freshly ground

⅛ teaspoongarlic powder

2eggs
large, lightly beaten

1 cuppanko
japanese, breadcrumbs

⅓ cupParmesan cheese
grated fresh

2 tablespoonsextra virgin olive oil
divided

2 tablespoonsfresh parsley
finely chopped, optional

4 quarterslemon
optional
Instructions
Step 1
Sprinkle chicken with salt, pepper, and garlic powder.
Step 2
Place eggs in a shallow bowl.
Step 3
Combine panko and cheese in another shallow bowl.
Step 4
Dip chicken in egg, dredge in breadcrumb mixture.
Step 5
Heat a large nonstick skillet over medium-high heat.
Step 6
Add 1 tablespoon oil; swirl to coat.
Step 7
Add half of chicken; cook 3 to 4 minutes on each side or until browned and done.
Step 8
Remove from pan.
Step 9
Repeat procedure with remaining oil and chicken.
Step 10
Sprinkle with parsley, and serve with lemon quarters, if desired.
