My take on Birria beef - loaded into a pasty with cheese and coriander onions!

To Make the Birria Beef
Step 1
1. (Optional) Char all the veg for 2 minutes aside on the flame of a gas hob.

2. Mix all the broth ingredients together.
Step 3
3. Season the beef on all sides and sear for 3 minutes per side on all sides to get some browning.
Step 4
4. Gently toast the Chillies for 4 minutes to release the flavour.

5. Add the broth, veg and Chillies in with the beef. Simmer for 2-4 hours until the beef starts to fall apart.

6. Pull the beef out the liquid and shred it. Blend the broth with everything in it until smooth, and pour a ladle of it over the beef to rehydrate, and allow this to cool.

7. Preheat the oven to 200C

8. Roll out one of the sheets of pastry to make it slightly bigger (this will be the lid) and cut both sheets into 6. Score each of the “lid” pieces to make your desired pattern.

9. Dice the onion and coriander and mix.

10. Grate your cheese and split it between the 6 base pieces. Divide your beef into 6 on top of the cheese, and add a spoon of the coriander onion mix. Leave a rim of just over a cm around the filling.

11. Whisk the egg and brush the edges around the filling and lay your lid pieces on top, pressing into the edges. Press a fork all the way round to seal it, then brush the top with egg. Cut a small cross vent hole in the middle to allow steam to escape.

12. Bake the pasties for 25-30 minutes at 200C - check the bottom to make sure the pastry is cooked.

13. Serve with the remainder of the broth topped with coriander onions as a dip!
