Instructions

Step 1
Pulse chickpeas, parsley, egg, lemon juice, cumin, salt and pepper in a food processor until smooth. Stir in breadcrumbs. Shape into 12 (2 1/2 inch) patties.
Step 2
Cook patties in hot oil in a large nonstick skillet over medium heat 2 minutes per side. place 2 patties, 1 lettuce leaf, 1 Tbsp cheese, and onions in each pita half.
Step 3
Serve with tzatziki sauce if desired.

Combine cucumber, tomatoes, yogurt, garlic, salt, and pepper in a medium bowl; cover and refrigerate until ready to serve.
