Instructions

Step 1
Toss the meat salt pepper garlic together in a large bowl until evenly mix cover and refrigerate until mixture is thoroughly chilled at least two hours and up to 24 hours alternatively placed in your freezer for 30 minutes to an hour until me is very cold even stiff but not frozen

Grind the mixture through the small die into a bowl set in ice

Using the paddle attachment of a stand mixer or a strong wooden spoon of mixing by hand mix on low speed or stir for 1 minute add the wine increase the mixing speed to medium and mix or surf one more minute or until the liquid is incorporated into the meat and look sticky
Step 4
Fry a bite size portion of the sausage and taste it refrigerate the remaining sausage mixture while you do this and then set up your stuffing equipment adjust the seasoning if necessary and mix again to incorporate additional seasoning
Step 5
Stuffed sauce sent you a hog casing and twist into 6 inches
Step 6
Cook the sausage to an internal temperature of 150°
