Marilyn Sultar’s No Mayonnaise Macaroni Salad
Hubby and I hate mayo, so when Passover came, I wanted to make egg salad, but no mayo, so I decided to make it with oil as a substitute. It turned out delicious, so Memorial Day 2022, I decided to make a macaroni salad using oil and mayo combination. It was the best Mac salad I ever had.

Instructions
Step 1
Fill a large pot 1/2 full with water. Add a few shakes of Kosher salt to the water and a couple drops of oil. Cook 1 pound macaroni according to package instructions.
Step 2
Drain the macaroni and pour drained macaroni into large mixing bowl. Pour about 1/8 cup of oil and mix well. If macaroni looks dry, add more , but don’t let it get oily.
Step 3
Add 3-5 shelled hard-boiled eggs that you have chopped up like you would for egg salad.
Step 4
Add Mirepoix and shredded carrots. Gently mix everything together.
Step 5
Add a heaping tbsps of mayonnaise. Sprinkle 1 tbsp Herbs d’Provance over mixture. Gently stir everything together. Adjust seasoning, oil and mayonnaise to your own taste.
