Instructions
Step 1
24 hours in advance liberally salt the steak on all sides
Step 2
Refrigerate uncovered on a raised open baking tray.

Remove steak from refrigerator 1 hour before cooking
Step 4
Preheat oven to 450 degrees

Pepper top and bottom of the steak

Bring up the skillet to high heat. Add grape seed oil after the skillet starts to smoke

Sear the steak on one side for 2 minutes
Step 8
Flip steak and sear for 2 minutes

Add a large pad of unsalted butter on the steak or in the skillet also add rosemary.

Spoon butter over the steak for 1 minute

Finish steak in the oven at 450 degrees for 4.5 minutes or until an internal temperature of 125 degrees

Let steak rest for 5 minutes
