Step 1
Heat the olive oil in a medium Dutch oven or heavy-bottomed soup pot over medium heat. When the oil is hot and shimmering, add the ground turkey and cook for about 6 minutes, stirring and breaking up the meat into small pieces with a spatula, until no longer pink. Add the BBQ 101 seasoning blend and cook for 2 minutes to toast the spices.
Step 2
Stir in the riced cauliflower, pumpkin, salsa, beans, and broth. Bring to a boil then lower to a simmer and cook (uncovered) for 15 minutes to allow the flavors to mingle and the chili to thicken.
Step 3
Turn off the heat and stir in the balsamic vinegar. Taste and season with extra salt if needed.
Step 4
Ladle the chili into bowls and serve topped with cheese and cilantro (or any other toppings that tickle your fancy!)
