Ingredients
6 servings

1 lbmini sweet peppers
any colors, stemmed and thinly sliced into rings

8Campari tomatoes
quartered

2scallions
trimmed and chopped

½ cupfresh dill fronds
chopped

2garlic cloves
large, crushed

8olives
roughly chopped

1 teaspoonsumac

½ teaspoonkosher salt

1lemon
large, zest and juice

3 tablespoonsextra-virgin olive oil
Instructions
Step 1
In a large bowl, combine peppers, tomatoes, scallions, dill, garlic and olives.
Step 2
Sprinkle with the sumac and salt. Add lemon zest and juice along with olive oil and toss. Taste and adjust seasoning.
Step 3
Set aside for 20 minutes or so before serving to allow the flavors to meld.
