Step 1
preheat oven to 425 degrees

Step 2
place chicken in a casserole dish and bake until chicken is cooked and juices run clear (30-40min)
Step 3
While chicken is baking: in a sauté pan set to medium. Add oil when it's up to temperature and cook the onion for a few minutes until fragrant.
Step 4
To the onion add jalapenos, cream cheese, mayonnaise, and mix together up to temperature. Slowly mix in the the cheddar and half of the parmesan. Once well combined and up to temperature remove from heat.
Step 5
In a separate bowl crush the chex cereal in to smaller pieces and then mix with the other half of the parmesan and melted butter.
Step 6
Once the chicken is done top with the cheesy mixture and then add the chex topping on top. Set the oven down to 350 degrees and cook for another ~15 minutes until done and topping is lightly browned.
