Step 1
Season chicken to taste and bake at 350F
Step 2
Bring water to boil and add Chickpea pasta, cook for 3 min
Step 3
Add Beet Fusilli to boiling Chickpea pasta, cook for another 5 min
Step 4
Drain and rinse pasta, immediately add and mix in red wine vinegar and olive oil
Step 5
De-seed, chop, and slice veggies with food processor or dice by hand
Step 6
Add veggies to cooked pasta and mix
Step 7
Dice chicken, add to cooked pasta/veggies, mix
