For the Marinade
1lemon peel
2juice of lemons
15garlic cloves
2shallots
coriander
1 Tbsprosemary
1 Tbspthyme
1 Tbspsage
1 Tbsppaprika
1 Tbspchilli powder
1 Tbspgarlic powder
1 Tbspsalt
1 Tbspcumin
¼ cupolive oil
¼ cupwhite wine vinegar
To finish
Instructions
Step 1
Blend up all the marinade ingredients and marinade it over night if possible
Step 2
Cut the potatoes up and put some olive oil over it along with the same spices that went into the marinade
Step 3
Put the potatoes on an oven tray and place the chicken on top of the potatoes. Cover with foil. Bake for 40 mins covered at 190 then remove foil and place it back into the oven
Step 4
Prepare the garlic on a pan with some lemon juice. Kill the heat and add the coriander. Drizzle over the chicken. Serve with some roasted broccoli
