Step 1
Oven 450. Place chicken, breast-side up on a baking sheet and pat dry with paper towels. Season with salt and pepper and set aside 30 min at room temp.
Step 2
In a small bowl, mix mayo, garlic, lemon zest, and mustard. Rub chicken with 120 g of mixture (about ½ cup), reserving the rest. Season with salt and pepper. Roast until cooked through 35-40 min. Let chicken rest 10 min before serving.
Step 3
Meanwhile, stir in lemon juice, chives, and paprika into reserved mayo mixture. Season to taste. Serve mayo alongside chicken.
