Homemade Baked Nachos with Fried Tomato Salsa

Instructions

Step 1
Method Preheat the oven to 200°C (fan 180°C, gas mark 6).
Step 2
Using kitchen scissors, cut each tortilla into eight triangles, the same size as tortilla crisps. Place them on a baking tray and mix with 1 tablespoon of the olive oil, the paprika and some salt. Spread out into a single layer, then bake for 10 minutes, turning halfway through.
Step 3
Meanwhile, heat the remaining oil in a frying pan over a high heat. Chuck in the tomatoes and fry for 4 minutes until beginning to blacken and burst. Stir in the red onion and garlic and squash the tomatoes with the back of your spoon so that they roughly break up. Cook for 2 minutes, then remove from the heat and stir through the red wine vinegar along with some salt and pepper.
Step 4
Scatter the mozzarella and cheddar over the tortilla chips, then bake for a further 5 minutes until the cheese has melted
Step 5
Pile the nachos into a bowl, spoon the salsa on top and sprinkle with the coriander.
