This recipe came to me in an email but I can’t find it on their website to provide the link. I added in mushrooms and omitted parsley from this version.

Step 1
Preheat oven to 375. Line a baking sheet with parchment paper.

Step 2
Heat non stick pan over medium heat, cook sausage until crumbled, about 5 minutes. Add in onion and cook until sausage is no longer pink. Transfer to paper towel lined plate to drain.
Step 3
Combine flour, baking powder, salt, pepper and Parmesan cheese in large bowl, stir to combine. Whisk eggs with 2 ounces milk and add to flour mixture, stir to combine. Add in cheddar cheese. Spoon in sausage mixture and stir to make thick batter.
Step 4
Scoop out about 1/4 cup batter on to prepared baking sheet. Bake in preheated oven until firm - 10 to 12 minutes.
Step 5
Allie to cool slightly before serving or freezing.
