Instructions
Step 1
Preheat oven to 400degrees. Line a large rimmed baking sheet with parchment paper.
Step 2
Cut each zucchini in half through the length. If they don't lay flat, trim a small portion off the bottom. Pat insides dry with paper towels. Align zucchini on prepared baking sheet.
Step 3
In a bowl, stir together olive oil and garlic then brush lightly over tops of zucchini. Sprinkle with salt and pepper to taste.
Step 4
Spread 1 Tbsp marinara sauce over each zucchini, leaving a small rim near edge uncoated.
Step 5
Sprinkle tops evenly with mozzarella cheese then parmesan cheese.
Step 6
Top with pepperoni slices slightly towards the middle. Cheese will melt and spread.
Step 7
Bake 12-18 minutes. Will depend on how thick your zucchini is and how crisp/tender you want them.
Step 8
Remove and top with a sprinkle of oregano. Serve warm.
