Spinach Stuffed Bell Pepper

Inspired by a couple of recipes I have seen during my quest to find healthy foods. This is simple, pretty quick (using an air fryer), and can be eaten with a whole wheat toast, and some fruit to round out your breakfast.

Instructions

Preparing your pepper

Step 1
Preheat your airfryer on 375. Remove the stem of the pepper, cut in half, and remove the seeds; take care not to tear the pepper. Place the pepper halves in the airfryer for 15 min. It's a good idea to check your pepper about half way through. You are wanting to soften the pepper, but not cook it all the way. This will prevent over cooking your eggs, and give a fully roasted pepper in the end. If you like a bite to your pepper adjust the cooking time

Preparing your egg filling

In a warm skillet add the olive oil and turkey sausage. Break apart the sausage and once cooked about half way through. Add your spinach along with a pinch of salt and a dash of cracked pepper. This will cook quickly, so don't leave it too long. Once the spinach is wilted remove from the heat and place in the fridge until your pepper is done roasting. This will expedite the cooling process, so you do not cook your eggs when adding them in the next step. Don't be overly concerned about how well done the sausage is, it will continue to cook in the final step.

Bringing it all together

Remove your cooled spinach and sausage from the fridge, add your eggs and parmesan. Whisk and pour into your bell pepper halves.
Step 5
Place back into a warm airfryer, on 350 for 15 minutes. Pause it about half way through to check your eggs. You can adjust the times to make your eggs to your liking.
