8 ozsmoked ham
cut into 1/4” pieces
12 ozAndouille sausage
sliced 1/4” thick
1green bell pepper
cored and thinly sliced
0.5onion
thinly sliced
2stalks celery
sliced on bias
4 clovesgarlic
minced
2 Tbstomato paste
1 ½ cupsamber beer
2 cupschicken broth
¾ tspdry thyme
¾ tspdried oregano
½ tspground cumin
1 ½ tspchili powder
1 tspkosher salt
¼ tspfresh ground pepper
2 cupsturkey
roughly shredded
4 cupslong grain rice
cooked
4 Tbsparsley
chopped, for garnish
½ tspcayenne pepper

Instructions
Step 1
Heat oil spray in large pot over medium high heat. Add the ham and sausage and cook, stirring occasionally, until brown around edges, about 5 minutes. Add the bell pepper, onion and celery and cook about 4 minutes until translucent. Add garlic and cook until fragrant. Add onion and tomato sauce and stir to coat the meat and vegetables. Cook until paste deepens to a rust color, about 4 minutes. Add beer and broth broth and stir to combine, scraping up brown bits from bottom. Add thyme, oregano, cayenne, cumin, chili powder, salt, pepper and turkey and stir to combine. Reduce to simmer and cook covered until the flavors blend and sauce is flavorful, about 20 minutes. Serve over rice and garnish.
