Instructions
Step 1
combine the spices in a bowl and add half to the chicken. Add 2 tbsp lime juice or to taste
Step 2
- add some olive oil to a pan and cook the chicken for a few minutes on each side (it won’t be fully cooked)
Step 3
- remove the chicken from the pan. To the same pan add the onion and capsicum. Add in the washed rice, remainder of the spice mix, lime juice, chicken stock cube and water.
Step 4
- add the chicken on top of the rice.
Step 5
- turn the heat to low and allow the rice and chicken to cook for around 25 minutes.
