Cilantro Lime Chicken Rice Bowl

Freshly cooked rice with crispy air fryer chicken, topped with a delicious sauce and all the fixings...you really can't go wrong!
I had a lot of fun making this recipe. It's quite literally a "rice bowl". Now you don't have to make your bowl out of rice, but it was a fun experience and a different way to enjoy one of my favorites!
For the rice bowl, I added a ramekin upside down inside the bowl. Then I packed it with rice and flipped it over to create a real bowl made out of rice! See my TikTok video for a full breakdown of how to make the rice bowl.

Ingredients
2 servings
1 cuprice
washed, cooked
¼ cupblack beans
drained and rinsed
¼ cupcan corn
3cherry tomatoes
halved
0.5avocado
sliced
4boneless chicken thighs
1 tspsalt
1 tsppepper
1 Tbspgarlic powder
1 Tbsppaprika
1 Tbspchili powder
½ Tbspcumin
½ Tbspdried oregano
1 bunchcilantro
chopped
0.5lime
juiced

Instructions
Step 1
Optional: Fresh rice is best, so it's best to start the rice first if you are making it on your own. I like to use my rice cooker.
Step 2
Preheat air fryer to 375 degrees.
Step 3
Add your chicken to a bowl and season with salt, pepper, garlic powder, paprika, chili powder, cumin and oregano.
Step 4
Air fry for 15-20 minutes until crispy on the outside, but still juicy on the inside.
Step 5
For the sauce, in a bowl, mix together your mayo, cilantro, lime juice, garlic powder and salt. This can be made ahead of time and kept stored in the fridge.
Step 6
Season your rice with cilantro and lime juice.
Step 7
Add your rice to a bowl along with your chicken, additional toppings and cilantro lime aioli. See video for alternative way to make a fun "rice bowl". Enjoy!
