Instructions

Step 1
Quinoa: rinse quinoa with water and add it to the dish covered with olive oil, start heating and wait until quinoa starts to crack (this adds nutty flavor) and then add water, bring up to boil, add salt and let it simmer for 15 min, then remove from heat and let it sit covered for 15 min before serving.
Step 2
Put asparagus and brussels spouts in two separate baking pans with aluminium foil covering the bottom. Season asparagus with olive oil, salt & pepper, and season brussels sprouts with olive oil, salt, pepper and garlic powder. Bake brussels sprouts at 200C for 30min, and bake asparagus at 200C for 10min.
Step 3
Slice avocado and hard-boiled eggs, season to taste, and serve everything.
