1sweet potatoes

3 cupschickpea
cooked

1 Tbspolive oil

1 Tbspharissa

1 cupquinoa dry

6 cupskale

2 cupsedamame
defrosted

2avocado
diced

2 Tbsppumpkin seeds
turmeric dressing
Instructions
Step 1
Preheat the oven to 350F/180C.
Step 2
Combine the olive oil and harissa. Divide in two.
Step 3
Toss the sweet potatoes with 1/2 the harissa oil and a pinch of salt. in the oven for 20 minutes.
Step 4
Toss the chickpeas with 1/2 the harissa oil. Add to the sweet potato tray, and cook for a further 20 minutes.
Step 5
Rinse the quinoa well and cook according to the packet instructions.
Step 6
Massage the kale with a pinch of salt and 1/2 tsp of olive oil.
Step 7
Blend all the dressing ingredients until smooth (or whisk together).
Step 8
Divide all the ingredients between 4 bowls, and enjoy!
