Apple Cinnamon Oatmeal Cookies

A delicious, soft cake-like cookie filled with oats, loaded with tiny chunks of apples and swirled with plenty of cinnamon. The perfect cookie to make on fall weekends!

Instructions

Preheat oven to 350F

Step 1
Line two 18”x13” baking sheets with silicone baking mats or parchment paper.
Step 2
In a mixing bowl whisk together flour, oats, cinnamon, baking soda and salt for 20 seconds, set aside.
Step 3
In mixer bowl fitted with paddle attachment, cream together butter & brown sugar until combined. Mix in egg & vanilla.
Step 4
Toss apples with lemon juice in sm. bowl. Add flour mixture to egg & vanilla mixture; mix until combined, then fold in apples.
Step 5
Scoop dough out 2T at a time,; drop onto prepared baking sheets 2” apart. Flatten just slightly.
Step 6
Bake (one sheet at a time) until cookies are set (14 - 15 min.)
Step 7
Cool on baking sheet (several min.); transfer to wire rack to cool completely.

Notes

Step 8
Use rolled old fashioned oats for best results. Do NOT substitute quick oats.
Step 9
Store cookies in an airtight container.
