Instructions

Step 1
On a cast iron pan turn on the heat to medium high, then drizzle some olive oil and put the minced onion and garlic. Let it sit until they re soft and golden
Step 2
Then add the red bell pepper and let it sit again until it’s soft
Step 3
Add the can of crushed tomatos, bring it to a boil then add the eggs and close the lid
Step 4
When the eggs are almost cooked turn of the heat let it sit with the closed lid for about 2 minutes and then add cheese and the parsley
