Step 1
In an ovenproof pan, fry off the onion and garlic until softened, 3-4 minutes. Then, add in the mushrooms and thyme and cook for a further 2-3 minutes, until the mushrooms release their water and begin to brown.
Step 2
Follow with the beans and their brine, crème fraiche, spinach, and season well. Make two wells in the pan to crack the eggs into, then place lid on the pan and reduce heat to low. Cook for 8 minutes with the lid on for an entirely hob-based option, or for even better results, place the pan without the lid into the oven for the final two minutes, until the egg whites are set.
Step 3
Finish with chili flakes and cheese. Enjoy with crusty bread.
