When you eat at a Korean restaurant, what is the most unique part about it? I think it is the various Korean side-dishes they serve for your meal. Among them, which one is your favorite? I can guess, based on comments from my viewers over the years that it is this cucumber side-dish called Oi Muchim in Korean. Many people seem to try this Korean cucumber side-dish at a Korean restaurant for the first time and they instantly fall in love with it. I can also see why most Korean restaurants choose this as one of their side-dishes. It is because it is very easy and cheap to make. Of course, more importantly, it tastes delicious. It is refreshing, savory, sweet, spicy, and a little sour. Wow, so many flavors in one side … Mmm … yummy ~~~ Now, you can enjoy this Korean cucumber side-dish without going out with this delicious recipe. 🙂

Step 1
Get 2 seedless cucumbers (4 Cups). Decoratively peel half of the skin off in strips, legnthwise.
Step 2
Divide each cucumber into quarters, lengthwise. Then, cut the cucumbers into about half-inch chunks.
Step 3
Season the cucumber pieces with about ¾ tsp salt. Mix it gently and set it aside for about 5 minutes.
Step 4
Meanwhile, dice ¼ cup of an onion into little pieces, finely chop 2 Tbsp worth of green onion, and mince 1 tsp of garlic.
Step 5
After 5 minutes, add all the chopped vegetables and the seasoning ingredients into the salted cucumbers: 1 Tbsp hot pepper powder, 2 tsp sugar, 2 tsp vinegar, 2 tsp sesame seeds, 1 tsp fish sauce (or soy sauce), and 1 tsp of the minced garlic.

Mix everything well, and then it is done.
