Ingredients

1 Tbspolive oil

1leek
washed and sliced

1celeriac
peeled and chopped

2apples
cored and chopped

Fresh thyme
leaves picked

1.5 litresvegetable stock

1 x 400gbutter beans

Instructions
Step 1
1. Heat the oil in a large pan, then add the leek and cook over a low heat for 10 minutes, until soft and sweet, taking care not to catch it.
Step 2
2. Add the celeriac, apples and thyme and cook for 2-3 minutes, then add the stock and butter beans and season well. Simmer over a low heat for 20-30 minutes until the celeriac is tender, then remove from the heat and blitz with a hand blender until smooth.
Step 3
3. Add the butter to a frying pan and once hot add the sage and fry until crispy.
Step 4
4. Ladle into big bowls and top with the sage and butter. Goes great with freshly baked soda bread.
