Step 1
Pour 2 cups boiling water over shiitake mushrooms, let sit for 30 minutes. Chop vegetables and stir fry in oil. Take shiitake out of water and squeeze water back in to soaking water. Set as aside soaking water. Slice and add to veggies. Add in piece of kombu. Set aside soaking water. When mixture is fragrant, add mirin and allow the alcohol to burn off. Add tamari, soaking water from shiitake and kombu. Adjust water to your preference for a lighter or thicker soup. Remove kombu and add cubed tofu. Simmer until vegetables are at desired doneness. Serve hot.
