Alligator Stir Fry With Chili Sauce

Ingredients

680gAlligator Meat
3Olive Oil
1 Tbspcooking wine
15gginger
4scallion
15ggarlic
50Thai Chili
1 Tbsplight soy sauce
1 TbspPi Xian Bean Paste
½ tspChicken Powder
0.5Szechuan Peppercorn
½ tspsugar
Instructions
Step 1
Slice and dice garlic, ginger, fresh Thai red chili (optional)and scallion; simply chop alligator meat into small pieces and place them in a bowl.
Step 2
Add chopped alligator in a heated skillet and further put cooking wine and Szechuan peppercorn in to mix(this will help get rid of gamy taste of the meat),remove from heat once golden brown.
Step 3
Start cooking oil in heated skillet and add in chopped garlic, ginger, red chili, season with light soy sauce and Pi Xian Bean paste sauce to mix together. Add some water in the chicken and simmer on high with the lid on.
Step 4
Once broth starts to boil, we can adjust the heat to medium until the broth starts to dry out(which takes 10 minutes or so). Garnish with chicken powder and sliced scallion, it’s ready to serve.
